On this page I’m sharing the recipe for caramelised onion, mushroom and feta lasagna. I always love lasagna for dinner. It’s great comfort food and it’ll satisfy everyone. But you might want a change after making lasagna with tomato sauce for many times. This lasagna with caramelised onion, mushroom and feta cheese is a great variation! And it’s vegetarian too!
Recipe caramelised onion, mushroom, feta lasagna
Ingredients (serves 2):
2 small onions (or 1 big onion), finely cut
2 teaspoons balsamic vinegar
250 grams chestnut mushrooms, sliced
200 grams spinach
250 grams ricotta cheese
6 wholegrain lasagna sheets
1 tbs lemon juice
75 grams feta cheese
Pepper and oregano to taste

Heat some olive oil in a frying pan and fry the onions on low-medium fire until glazy. Add the balsamic vinegar and fry for 1 more minute. Put the onions in a bowl and set aside.
Preheat the oven to 200C.
In the same pan, warm a bit more olive oil and add the mushrooms. Stir until they’ve released their liquid, then add the spinach. When they’re done, stir in the onions and 2/3 of the ricotta cheese. Turn down the fire.
Grease an oven tray with olive oil. Put 2 lasagna sheets on the bottom and cover with half of the spinach-ricotta mixture. Repeat this step and end with a layer of lasagna sheets. Spread the remaining ricotta on top and crumble the feta cheese over it.
Bake the caramelised onion, mushroom, feta lasagna for 20-25 minutes. Top with some pepper and/or oregano to taste.
