Easy 2-ingredient homemade Viennetta

Did you know that it’s super easy to create your own version of Viennetta, the classic ice cream cake? On this page I’m sharing a recipe for an easy 2-ingredient homemade Viennetta. You can adjust it according to your own taste. I made a chocolate-vanilla ice cream cake, but you can also make a strawberry or pistachio Vienetta for example.

For me Vienetta is really something you eat during the holiday period. For as long as I can remember my mom made a ‘grand dessert’ for dessert at Christmas. She’d make us all a plate with a bit of chocolate mousse, a scoop of ice cream and a slice of Viennetta. It was my favorite part of the Christmas dinner!
I still have a soft spot for the store-bought Viennetta ice cream cake, but did you know that it’s super easy to make your own version?

Just buy your favorite flavor of ice cream (or mix two or three flavors) and put chocolate crisps in between. You can decorate this easy homemade Viennetta with whatever you want. Scroll down to find out how I made this easy 2 ingredient Viennetta.

Recipe easy homemade Viennetta

Ingredients (for 1 ice cream cake):
1 kg (2 liters) of ice cream flavor of your choice, I used Vanilla and Straciatella
1 package of chocolate crisps (125 grams)
Toppings of your choice, I used chocolate almonds and sprinkles

Take the ice cream out of the freezer until soft but not melted.
Line a loaf tin with cling wrap, make sure to leave some extra hanging on the sides.

Put a layer of the soft ice cream on the bottom of the loaf tin, around 1 cm thick. Create a layer of the chocolate crisps. Cover with another layer of ice cream. Create a second layer of chocolate crisps and end with the last layer of ice cream.
Cover it up with the extra cling wrap and freeze for at least an hour. You can also do up until this step the day before.
Take the homemade Viennetta out of the freezer right before serving. Open up the cling foil, put a plate or serving board on top of your loaf tin and turn the cake around. You can now easily lift of the tin and remove the cling foil. Quickly decorate with the toppings of your choice. Cut in slices and serve immediately.
