Happy 2020, New Year’s Eve Cupcakes

Want to celebrate New Year’s Eve or the new year 2020 with some sweets? these New Year’s Eve cupcakes are a perfect sweet treat to celebrate 2020!
I made natural cupcakes but you can also make any other flavor like chocolate-chip cupcakes or lemon-poppyseed cupcakes.
I love how you can just put the number 20 on each cupcake and combine to to make the new year 2020. It’s a very good excuse to take two cupcakes, don’t you think?

These cupcakes are a nice sweet snack, but they also make a good dessert. I often serve finger food on New Years Eve, rather than a whole dinner. So people are often quite satisfied after all the bites, but still craving for something sweet. These cupcakes make the perfect sweet little dessert at your party.

I made these to celebrate the start of 2020, but you can also use them any other year by changing the numbers of course. Although I really like the symmetry of 2020.

Recipe 2020 New Year’s Eve Cupcakes
Ingredients for 10-12 muffins:
250 gram cupcake mix (I used Funcakes)
3 eieren
125 gram plant-based butter (margarine)

75 grams white fondant
Star sprinkles 

You can double this recipe for 20-24 cupcakes

Preheat the oven to 160 degrees. Put the cupcake mix, eggs and margarine in a mixer and mix at low speed for about 4 minutes. Line a muffin pan with paper muffin cups, use an ice-cream scoop to put the batter in the cups. They should be about half full. Bake for 18-20 minutes Let them cool before you start decorating.
Knead the fondant. Make small balls and make a flat circle from each ball. Press uit the numbers 2 and 0 with cookie cutters or a sharp knife. Put the numbers on half of the cupcakes and the circles with the numbers cut out on the other half of the cupcakes. Decorate with the sprinkles.
