A few weeks back I got myself an ice cream machine. And as we had many sunny days here in the netherlands, I already used it quite a lot. I got the Magimix Gelato Expert, a fool-proof machine as it does all the work for you.
I loved experimenting with my ice cream machine. Besides the fact that home made food is always more fun than store bought food, I loved it that I could create healthy and/or vegan ice cream recipes.
In this blog post I’m sharing 2 vegan and sugar free ice cream recipes with you and I’ll tell you more about the Magimix Gelato Expert.
I had another ice cream maker before, which was basically a frozen bowl in which you would pour your mixture and you had to stir it for yourself. I wasn’t very happy with it because it was a lot of work and often it would just get stuck to the sides.
The Magimix gelato expert is an automatic ice cream machine. So you don’t have to stir, it does that automatically. You just turn it on a few minutes before you start so that the ice cream machine can start cooling. You poor in your mixture and you selectvthe desired program. The Gelato Expert wil stir as long as needed, so you don’t even need to keep an eye out.
The only downside is that it’s a pretty big machine to have in your kitchen. So I think I’ll keep it in the kitchen for the summer and store it when autumn starts.
I’ve created 2 healthy vegan ice cream recipes that you can make with the Magimix Gelato Expert or another ice cream machine. The first recipe is for vegan, sugar free and gluten free strawberry ice cream.
Vegan Strawberry ice cream
Ingredients:
Ingredients:
2 frozen bananas
100 gram frozen strawberries
250ml soy milk (unsweetened)
Thaw the fruit for 5 minutes. Turn on the Gelato Expert so it can start cooling. Put all the ingredients in a blender or food processor and mix for 1-2 minutes. Pour the mixture in the ice cream machine and select the ice cream setting. The program will stop autimaticaly when done.
The second vegan recipe I created with the ice cream machine is this chocolate peanut butter ice cream. This is one of my favorites as it’s a flavor that you can’t buy in the shops but is a divine combination!
Vegan chocolate peanut butter ice cream
1 can (400ml/14oz) coconut milk
1 can (400ml/14oz) coconut milk
50 grams (1/4 cup) peanut butter
2 tablespoons cacao powder (unsweetened)
1 teaspoon vanilla extract
a hint of salt
optionally: 50 ml maple syrup or a few drips of stevia

Mix all the ingredients (either in a blender or foodprocessor or by hand). Put the chocolate peanut butter mixture in the fridge to cool (for about 30 minutes, longer is also fine). Turn on the ice cream maker 5 minutes before you want to start. Pour the mixture into the bowl. Set the program to ice cream.
I served it with a drop of peanut butter and Hagelswag.
