The Magioni Pizza Diet Summer Edition

Do you remember how healthy pizza brand Magioni launched a Pizza Diet in January? This was the perfect time to get back on track after Christmas. This week they’ve announced the Summer Edition of their Pizza Diet. Especially to get in shape before your beach vacation or swimming pool sessions.
Although you don’t have to take this pizza diet too seriously, it does provide you with 3 pizza recipes a day for 3 days. It makes sure you get your daily vegetable intake and it never exceeds 1500 calories a day.

In this blog post I’ll share some of the recipes from the Summer Pizza Diet with you, starting with the breakfast pizza pictured above.

Berry Breakfast Pizza
1 person, 258 kcal

Ingredients:
1 Magioni cherry/blueberry pizza base
30 grams coconut yogurt (I used Abbot Kinney’s)
20 grams raspberries
20 grams blackberries
1 teaspoon almonds, finely chopped
(Optionally: 15 grams protein powder)

Preheat the oven to 220°C. Bake the cherry/blueberry pizza base for 8 to 10 minutes. If you use protein powder, mix it with the coconut yogurt. Spread the coconut yogurt over the pizza base. Top with the raspberries, blackberries and chopped almonds.

Skinny Egg lunch pizza
2 people, less than 250 kcal pp

Ingredients:
1 Magioni cauliflower base
110 grams fresh spinach
2 eggs
5 grams dried chili flakes
3 tbs hummus
(The original recipe included poached eggs and a homemade Florentine sauce made from Greek yogurt, egg yolk, lemon juice, garlic, mustard and paprika. But I didn’t have a long lunch break I boiled my eggs and used hummus instead of the Florentine sauce. Check this video if you want to learn how to poach eggs in an easy way)

Preheat the oven to 220°C. Bake the cauliflower pizza base for 10-12 minutes. Bring water to a boil and boil the eggs for 5 minutes. Shortly fry the spinach. Spread the hummus over the pizza base and top it with all the ingredients.


Thai yellow curry pizza
2 people, 417 kcal pp

Ingredients:
1 Magioni courgette pizza base
55 grams Fairtrade yellow curry paste
30 grams coconut milk (I used coconut yogurt)
25 grams sugar snaps
30 grams red bell pepper
30 grams mushrooms

Preheat the oven to 220°C and bake the courgette pizza base for 10-12 minutes. Mix the yellow curry paste with the coconut milk or yogurt  and stir well. Chop the bell pepper and slice the mushrooms. Shortly fry the mushrooms, bell pepper and sugarsnaps until warm. Spread the yellow curry paste over the pizza base and top with the vegetables.
