Recipe cauliflower pizza

On this page I’m sharing the recipe for cauliflower pizza. The very first picture on my Instagram account was one of a cauliflower pizza. I just started to eat more healthy and meat-free and I made a pizza with a cauliflower crust for a friend. She told me that I should take a picture of it and put it on Instagram because ‘that’s what people do’. I had no idea how Instagram worked, the picture was really ugly and I only got 12 likes. But that was the start of Anne Travel Foodie, six years ago.

When I received an e-magazine from Rude Health, the vegan dairy company, I saw that it also had a recipe for cauliflower pizza in it. I thought it would be perfect to share on my blog as I never actually shared the recipe of my own cauliflower pizza here (mostly because the picture was too ugly). Luckily Rude Health took some prettier pictures of this dish!

The recipe for this cauliflower pizza is vegetarian, but you can easily make it vegan. Just replace the goat cheese with a vegan cheese alternative, and instead of the egg mix 1 tablespoon of flaxseed with 3 tablespoons of water.

Recipe cauliflower pizza

Ingredients (serves 2):
125ml Rude Health Cashew Drink
300g cauliflower
300g flour
1 egg
1tsp baking powder
½ tsp salt
½ tsp nutmeg
70g tomato paste
100g asparagus or other seasonal vegetables
50g black olives
100g artichoke hearts
60g goat cheese (optional)
85g rocket
½ red pepper

Preheat the oven to 200°C and line the baking tray with baking paper.
Mix the cauliflower, flour, 100ml of the Cashew Drink, egg, baking powder, salt and nutmeg in the food processor until it forms a ball.
Roll out the ball of cauliflower dough into a pizza shape, on parchment paper and bake for 15 minutes in the preheated oven.
Mix the tomato paste with the remaining 25ml of the Rude Health Cashew Drink.
Cut the asparagus lengthwise, the olives in slices, the artichoke hearts into quarters and (optionally) crumble the goat cheese.
Take the pizza crust out of the oven. Spread a layer of the tomato paste mixture over it and top with the asparagus, olives, artichoke and goat cheese. Bake for another 5 minutes in the oven.
Serve with fresh rocket and chopped red pepper pieces.
