Recipe Bumi Tempeh Bowl

I discovered something new: Bumi. Bumi is a brand that sells marinated tempeh. I used their Asian style marinated tempeh to make this healthy dinner bowl. On this page you’ll find more information about Bumi and the recipe of this Bumi Tempeh Bowl.

Tempeh is a plant-based product that is perfect for replacing meat in dishes. On this page I’m telling you more about the difference between tofu and tempeh. Normally tempeh is made on a soy beans base. But Bumi uses lupin beans. Whereas soy beans often come from far away countries like Brazil, lupin beans can grow perfectly well in Europe. Bumi gets their lupin beans from France, which gives them a much smaller footprint.

As people often find it difficult to use tempeh in dishes. This is because tempeh is super delicious if you marinate it well, but if you don’t know how to marinate your tempeh, it might hold you back. Luckily Bumi already marinated the tempeh for you! They’ve got three different styles: Asian, Mexican and Indian spiced.
I used the Asian spiced tempeh for this healthy bowl. You can find the Bumi Tempeh at Ekoplaza in the Netherlands and at Bio-Planet in Belgium.
I’ve used broccoli rice as a base for this bowl. Broccoli rice is available in most bigger supermarkets, but you can also easily make it yourself by grating raw broccoli in a food processor.
This Bumi Tempeh bowl is vegetarian and lactose-free, and if you skip the egg at the end it’s suitable for vegans too.

Recipe Bumi Tempeh Bowl

Ingredients (for 2 people)
1 package (175 grams) Bumi Tempeh Asian style
250 grams chestnut mushrooms
400 grams broccoli rice
100 grams spinach
2 eggs

Bring water to a boil, boil the eggs for 6 minutes.
Cut the mushrooms in four. Warm olive oil in a skillet. Add the mushrooms and fry for 3 minutes. Add the Bumi Tempeh and fry for 3 more minutes. Stir occassionally. Add the spinach and fry for 1 more minute.
Warm another skillet. Add some olive oil and fry the broccoli rice for 2 minutes.
Put the broccoli rice in bowls, top with the mushrooms, spinach and tempeh. Peel the eggs and cut them in half. Put an egg on every bowl.
