I love gnocchi, I’ve created several recipes with it, like my gnocchi with cashew cream. I’ve even made my own sweet potato gnocchi from scratch. This time I made a creamy gnocchi with pesto and green peas. It’s a perfect vegetarian dinner recipe and wonderful comfort food.
I’ve got the inspiration for this creamy gnocchi with pesto and green peas from Foodies Magazine. It’s a great magazine for foodies with delicious recipes and beautiful food photography. I’m always willing to try new gnocchi recipes, so when I saw this one I wanted to make it straight away. The recipe is for 2 people, which I like as I’m most often cooking for 2 and I don’t like food waste. If you are cooking for more, you can of course just multiply the ingredients. It’s super easy to make, you’re done in 10 minutes. Perfect for weekdays when you’re short on time.

Recipe creamy gnocchi with pesto and green peas
Ingredients (2 people):
50 grams spinach
100 grams green peas, from the freezer, thawed
4 tbs pesto
3 tbs creme fraiche
300 grams gnocchi
Put the spinach, green peas and a dash of water in a pan and heat until the spinach has shrunk. Spoon in the creme fraiche and the pesto and warm shortly. Prepare the gnocchi as stated on the package. Drain the gnocchi and add to the pan. Stir carefully.
