Dinner recipe: vegetarian spicy rice

Sometimes you just want an easy weekday recipe. Just a few ingredients and not too much time. This dinner recipe for vegetarian spicy rice is just that. An easy, vegetarian weekday recipe. You only need 5 ingredients and 10 minutes. Perfect for when you’re in a hurry or when you’ve had a long day and you don’t want to spend too much time in the kitchen.

The basis for this dinner recipe was the vegan organic Java Bumbu for spicy rice from Smaakt. The Java Bumbu gives so much flavor to your dish that you don’t need much more. Just some rice, meat replacement and vegetables. I’ve added an egg, but if you want to make the dish completely vegan you can substitute the egg for some fried onion.

Recipe Vegetarian Spicy Rice
Ingredients (serves 3):
1 package Smaakt Java Bumbu
180 gram rice
600 grams mixed vegetables (I got a Thai mix)
200 grams spicy vegetarian pieces (meat substitute)
3 eggs

Prepare the rice as stated on the package. Fry the bumbu shortly (about 2 minutes). Add the vegetarian pieces and the vegetables. Fry for 6-8 minutes. In the meantime, softly boil the eggs. 
Serve the rice with the spicy vegetables and the egg.
Replace the egg by crispy onions for a vegan version.
