I’m very happy to notice that more and more people are either becoming vegetarians or that are eating vegetarian for more days of the week. I have no problem finding inspiration for healthy vegetarian meals. I’ve been cooking vegetarian for years now and I didn’t run out of inspiration yet. I often cook vegan, so I my meals are often plant-based. When I say that I often don’t use any dairy either, people look at me as if it’s very difficult to eat a tasty and satisfying vegan meal.
Well it doesn’t have to be! I have several vegan dinner recipes on my website (click here for some vegan dinner inspiration) and I find it quite easy to turn existing vegetarian recipes vegan.
I got my inspiration for this vegan Fried Rice with Falafel dish from the HelloFresh website, they had a vegetarian recipe with fried rice and falafel online. With just a simple twist I turned it into a vegan dinner recipe. All I had to do was to check if the falafel was vegan and to switch the yogurt for soy yogurt! I also used

Fried Rice Falafel recipe
Ingredients (for 2 people):
170 grams Basmati rice (I used wholegrain)
1 big carrot (250 grams)
3 teaspoons curry spices
1/2 cucumber
200 grams broccoli
1 teaspoon harissa
1/2 garlic clove
100 gram unsweetened soy yogurt
1 package of falafel (check if it’s vegan)
Prepare the rice as stated on the package. Cut the broccoli in florets and slice the carrot. Warm some olive oil in a frying pan and fry the vegetables together with the harissa and curry spices for one minut. Add 4 tablespoons of water and fry for another 6-7 minutes. Finely chop the garlic and grate the cucumber, mix with the soy yogurt. Warm some olive oil in a frying pan and fry the falafel balls for 2-3 minutes on each side. Add the rice to the vegetables and fry for another 2 minutes.
Divide the rice over two plates and serve with the falafel and tzatziki.
