Just two slices of bread with a slice of cheese in between is a bit boring. But did you know you can make a delicious variety of the classic grilled cheese sandwich? And no meat is needed, so this new way to make grilled cheese is suitable for vegetarians (like myself).
I always use wholewheat bread as this has the highest amount of fiber, which makes it the healthiest variety of bread.
I made this grilled cheese with feta cheese instead of regular slices of cheese. I think it has more flavor and another benefit is that it contains less fat than for example Gouda or cheddar cheese.
I added some tomatoes for my vegetable intake and vegan pesto for more flavor. You can find my recipe for vegan pesto on this page. You can also use a homemade kale pesto for this new way to make grilled cheese.
