Recipe: Pumpkin Frittata

I love pumpkin! Especially in autumn and winter it’s one of my most favorite vegetables. I’m sharing the recipe of Pumpkin Frittata with you today. Frittata is an egg-based dish, originated in Italy. I’ve made this frittata recipe with pumpkin as I love pumpkin as an ingredient! I’ve got several recipes with pumpkin on my website like Vegan Pumpkin Bread and Healthy Pumpkin Pies. This time I’m sharing the recipe of Pumpkin Frittata. This dish is vegetarian and you can use it as a lunch dish for four people or dinner for two.

Recipe Pumpkin Frittata
Ingredients (for 2 people):
400 grams pumpkin cubes

1 leek, sliced
3 eggs, beaten
50 gram goat cheese
Fresh parsley
Boil the pumpkin cubes and leek slices for 5 minutes. Drain the vegetables. Warm a skillet and bake the vegetables for 3 minutes. Beat the eggs and poor over the vegetables. Crumble the goat cheese over the frittata and bake for 5 minutes. Pre-heat the oven grill. Grill the pumpkin frittata for 5 minutes. Serve with fresh parsley.
