Tortilla Bowl with vegan and gluten free multigrain wraps

I discovered something new in my supermarket: BFree multigrain wraps. They’re vegan and gluten free, high in fiber, low in fat and only 99 calories per wrap. My English visitors can find them at Tesco and in the Netherlands they’re sold at the Albert Heijn. I was very curious how they would taste and decided to create a recipe with them!

I made my own tortilla bowls! I once had a salad in a tortilla bowl in a Mexican restaurant when I was in New York, but that one tasted quite unhealthy. Perhaps it was deep fried, but at least they used a tortilla that wasn’t as healthy as this one! So here’s my healthy recipe for a vegan and gluten free tortilla bowl. Enjoy!

To make the tortilla bowl, preheat the oven to 180°C/350°F. Put the wrap in a bowl and spray it with olive oil. Use a smaller bowl, or even more easy a chunk of aluminium foil, to get the wrap in the right shape and position. Put the bowl in the oven for 15 minutes.
In the meantime, warm up some corn in a small pan, cut an avocado and a jalapeno pepper in slices and a tomato in cubes. When the tortilla bowls are ready, fill them with lettuce, the corn, avocado, jalapeno and tomatoes. Serve with some fresh coriander (cilantro) and a dressing of your choice. I used a teaspoon of soy yogurt for each bowl.
