Vegan Curry Recipes

I love a good curry, especially on colder days. It’s just great comfort food. And it can be quite healthy too. Especially if you make one of these vegan curry recipes! I’ve listed my favorite vegan curry recipes on this page. From Peanut Butter Curry to Pulled Jackfruit Curry. You can find all the delicious dinner recipes here.

Pulled Jackfruit Curry

I found this recipe for vegan pulled jack fruit curry in the MOB Veggie cookbook. Here’s the recipe for 4 people:
Prepare 300-400 brown rice as stated on the package. Put some olive oil in a frying pan and add 1 teaspoon of cumin seeds, 1 teaspoon of mustard seed, 2 chopped onions, 5 cloves of garlic and a bit of chopped ginger. Fry for a few minutes.
Wash and rinse 2 400 gram cans of jackfruit. Add 1 teaspoon of cilantro, 1 teaspoon of curcuma, 2 tablespoons of tomato paste and the jackfruit to the onions. Mix and add 500 ml sifted tomatoes (passata). Cover with the lid and let it simmer for 10 minutes. Remove the lid and pull the jackfruit apart. Add 2 tablespoons of coconut cream. Stir well. Let it simmer for a few more minutes until the sauce is thick. Serve with the brown rice.

This vegan saag tempeh curry is super easy to make. Normally you need a lot of spices to flavor your curry, but because this tempeh is already seasoned you don’t need to add much.

Vegan Thai Green Curry

This vegan Thai Green Curry is a delicious dinner recipe. I especially like it in spring and summer, as I do with most Thai recipes. But it’s great anytime of the year really. This green curry is super easy to make. All you need is 4 ingredients and one big pan and you can just put everything in there.

Peanut Butter Curry

I love peanut butter! Especially the 100% nut butters without any added ingredients. I sometimes hide the peanut butter jar in my kitchen cabinet, so that I don’t just eat the whole jar at once. When I have dates or bananas, I use them as a transportation mode to get my peanut butter fix. So you can imagine how happy I was to discover that you can use peanut butter in a curry. Now I can even have peanut butter for dinner!

Cauliflower chickpea curry

Cauliflower and chickpeas are two very popular curry ingredients. In this curry I combined them both! It’s a pretty standard curry recipe, so you can also swap the vegetables with other veggies.
