Did you know that Oreo cookies are vegan? So you can enjoy this gorgeous pie when you’re eating vegan.
I have to admit that this pie isn’t very healthy. Even though I didn’t add any sugar, the Oreo cookies do contain sugar.
But if you eat healthy most of the time, there’s nothing wrong with a little indulgence every once in awhile. And with this pie you can enjoy without feeling guilty for hurting any animals!
Ingredients:
* 2 packages Oreo cookies (28 pcs)
* 60 gr (2 oz) plant based butter, room temperature
* 300 gr (10 oz) extra dark chocolate (check the label to ensure it’s vegan)
(If you’re not eating vegan, you can replace the ingredients below with 250 gr whipping cream)
* 600 gr silken tofu (it’s softer than regular tofu)
* 2 tbs agave syrup
* 1tbs vanilla essence
Put the cookies in a food processor until crumbled. Set 2tbs aside to use for decoration. Mix the cookie crumbles with the butter. Line a pie plate with baking paper and cover the bottom and the sides of the plate with the cookie mixture. Put the pie crust in the fridge while you make the filling.
Melt the dark chocolate au-bain-marie (bring a pan of water to boil, put a smaller pan on top with the chocolate in it).
If you’re making the non vegan version; whip the cream and melt the chocolate with the whipped cream.
For the vegan version put the tofu, agave syrup and vanilla essence in the food processor and blend until smooth.
Carefully spoon in the chocolate.
Fill the prepared pie crust with the chocolate mixture and put in the fridge to firm. If you have time, it’s best to make this pie a day in advance so the pie is nicely firmed. If you make the pie on the day itself, put it in the fridge for at least 4 hours.
