This vegan Thai Green Curry is a delicious dinner recipe. I especially like it in spring and summer, as I do with most Thai recipes. But it’s great anytime of the year really. This green curry is super easy to make. All you need is 4 ingredients and one big pan and you can just put everything in there. This Thai curry recipe is vegetarian and vegan.
I love the Asian cuisine and ever since I’ve been to Thailand I love Thai food even more than before. One of my favorite Thai dishes is Pad Thai (click here for a vegan Pad Thai recipe). And besides that I also really like Thai curries. When you hear the word curry, you probably think of India. But Thailand also has some nice curries. What I like about this green curry is that it’s very mild. So it’s perfect for people that don’t like spicy food. Because of the coconut milk it’s actually kind of refreshing. I guess that’s why I like it so much on warm days!
Recipe vegan Thai green curry
Ingredients (2 portions):
1 package Green Curry Paste
1 bag mixed Thai vegetables (400 grams)
200 ml coconut milk
1 package vegan ‘chicken’
Warm a wok pan on medium fire. Add the curry paste and stir well. Add the vegan chicken strips and stir. Add the vegetables and fry for 2 minutes. Add the coconut milk and let it simmer until the vegetables are ready. It probably only takes a few minutes.
Serve your vegan Thai curry with rice or noodles.
