Apple Muffins recipe

Sometimes you’re just in need of a simple recipe with ingredients that you already have in your cupboard. This apple muffins recipe is like that. It’s easy to make and you probably have all the ingredients at home already. Perfect if you just decided you want to bake something and you don’t want to leave the house.

On this page I’m sharing the recipe for apple muffins. It’s a basic recipe, nothing special. But there are few things as good as a lukewarm home baked apple muffin! I always love apple pie, but it’s so much work to bake one. These apple muffins are a great replacement. You still have the warm apple and dough combination but they’re much easier to make! Preparing these apple muffins will only take a few minutes and the oven does the rest of the work.

Recipe apple muffins

Ingredients (for 6 muffins):
1 large apple
100 grams margarine (or butter)
75 grams sugar
1 egg
100 grams self-rising flour
1 teaspoon cinnamon
1 teaspoon lemon juice

Preheat the oven to 180C.
Peel the apple and cut it in small pieces.
Melt the butter, stir in the sugar. Beat the egg. Add the butter-sugar mixture to the egg, stir well.
Add the self-rising flour, cinnamon, apple pieces and lemon juice. Stir well.
Line 6 muffin tins with parchment paper and divide the dough over the 6 tins.
Bake for 30 minutes until done.

Let them cool in the muffin tin for a few minutes, transfer them to a wire rack to cool them off more.
Store in an airtight container.
