Chocolate Banana Peanut Butter Snacks

There’s only one combination that’s better than banana and peanut butter, and that’s banana, peanut butter and chocolate! My preferred way to eat a banana is with either peanut butter, chocolate or both. I can just cut a banana in slices and spread some PB over them as a snack, but I also love peanut butter and banana on toast. This time I made a sweet treat combining my favorite ingredients. These Chocolate Banana Peanut Butter Snacks are super easy to make and you only need 4 ingredients. I think you can guess the first three (duh, chocolate, peanut butter and banana), but the 4th ingredient is a secret ingredient that I recently discovered. Whenever I was dipping something in chocolate, I always had a hard time creating a nice equal and thin layer. As you can see with my chocolate cheesecake bites, it turned out a bit scratchy. If I saw pictures of cakes, pastries or snacks covered in chocolate on Pinterest, they always looked so nice and even. And I also remember that when I was a kid I’d sometimes get a soft-serve ice cream which they would dip in chocolate sauce. It would greate a thin, smooth layer over the ice cream. But whenever I’m trying to dip something cold in melted chocolate, the chocolate hardens and it becomes very difficult to smear. But I discovered a super simple trick; just one extra ingredient that will make this process super easy! It’s coconut oil! Just melt a bit of coconut oil when you’re melting the chocolate and that’ll do the trick. The melted chocolate will be more liquid and it’ll be so much easier to decorate this banana peanut butter snacks and everything else that you want to dip in chocolate!

These chocolate covered banana peanut butter snacks are great to make for 1, but you can also make a whole bunch for when people are coming over. I’ve noticed that kids love them a lot too. It’s much better to eat these as a snack than most store-bought snacks of course.
These banana snacks are gluten-free and they’re vegan if you use vegan chocolate (most dark chocolate is vegan). Below is the recipe for these chocolate peanut butter snacks.

Recipe Chocolate Peanut Butter Snacks

Ingredients (for 1 person)
1 banana
2 tbs peanut butter
50 grams (about 3 tbs) chocolate of your choice (I used milk chocolate)
1 tbs coconut oil
Cocktail sticks

Peel and slice the banana. Top half of the slices with peanut butter. Cover with the remaining banana slices. Put a cocktail stick in each little tower.
Put on parchment paper in the freezer. Freeze for 1 to 4 hours.
Melt the chocolate with the coconut oil au-bain-marie or in the microwave (with 30 second intervals). Dip the banana towers in the melted chocolate. You can also use a teaspoon to divide the chocolate evenly over the banana towers.
Put the snacks back on the parchment paper and put in the fridge until serving (or eat them straight away).
