Avocado Halloumi sandwiches

As you might know I’m a big avocado fan. I’ve got an avocado as a log at the top of this page and I even have my own avocado filter on Facebook and Instagram. I buy at least one avocado every week. Most of the time I have it on my sandwich with hummus and a bit of pepper. But sometimes I get more creative, like with these avocado halloumi sandwiches.

Now that I’m working from home, I can use halloumi cheese for lunch too. I love halloumi cheese, but mostly when it’s just grilled and still warm. So it isn’t very handy to prepare beforehand as it can get a bit chewy when it cools down. But if you’re working at home or making this sandwich in the weekend, it’s perfect!

You don’t need much for these avocado halloumi sandwiches and I’m sure it’ll become your new favorite lunch dish!

Recipe Avocado Halloumi sandwiches

I’m not sure we even need to call it a recipe, as it’s so super easy to make. But here you go, the recipe for avocado halloumi sandwiches.

Ingredients (for 4 sandwiches):
4 whole wheat buns
2 avocados
1 package halloumi cheese
1 tablespoon sesame seeds
1 teaspoon chili flakes
1 tablespoon of agave syrup or honey
pepper to taste

Peel the avocados, cut them in quarters. Finely chop them and put them in a bowl. Use a fork to mash them.
Warm a skillet with some olive oil. Cut the halloumi cheese in strips. Shortly fry them on low-medium fire for about 2 minutes on each side until golden brown.
Cut the bread in half. Cover the 4 bottom halves with the mashed avocado. Top with the grilled halloumi cheese. Divide the sesame seeds, chili flakes, agave syrup and pepper over them.
