Cakelet: pancake omelet recipe

I discovered something new on Instagram: Cakelet. A Cakelet is a cross-over between a pancake and an omelet. It makes a great breakfast, brunch or lunch dish and will satisfy both sweet and savory pancake lovers!
This cakelet reminded me a bit of Dutch Baby Pancake, but it was easier to make and it contains an ingredient that you might not expect. On this page I’m sharing the recipe for this pancake omelet called Cakelet.

A Cakelet is super easy to make. All you need is three ingredients. You might already expect that you need flour and eggs, but the 3rd ingredient might be one that you didn’t expect. It’s grated cheese! Because of this cheese, it also reminds you of an omelet as well, instead of only a regular pancake. It doesn’t turn all the way savory with this cheese, so you can still top it with sweet toppings if you like. You can of course also top it with savory ingredients. I’ve topped it with sweet toppings; coconut yogurt, cranberry compote and chopped almonds. Scroll down for the recipe of this Cakelet.

Cakelet recipe

Ingredients (for 1 person):
2 eggs
25 grams grated cheese
2 tablespoons of self-rising flour (or regular flour with a bit of baking powder)

Coconut oil for frying

Topping suggestion:
Coconut yogurt
Cranberry compote
Chopped almonds

Crack the eggs above a mixing bowl and whisk them until well mixed and smooth. Add the flour and the grated cheese and whisk until combined.

Warm some coconut oil in a frying pan and pour in the batter. When bubbles start to appear, flip the cakelet just like you’d with a pancake or an omelet. Bake for a few more minutes.
Serve the cakelet with toppings of your choice. I added coconut yogurt, cranberry compote and chopped almonds.
