I’ve started a new category on my blog: Sugar Sunday! So far all recipes on my blog were sugar-free. But because we all want something sweet sometimes, especially in the weekend, I’ll be sharing recipes with sugar occasionally. This first Sugar Sunday recipe is this one for Cheesecake Bites.
They’re like mini cheesecakes that you can eat easily.
I made a cranberry cheesecake version, covered with chocolate. But you can of course also make the cheesecake bite without either the cranberries or the chocolate.

Recipe Chocolate covered cranberry cheesecake bites
Ingredients (16 pieces):
225 grams cream cheese, room temperature
125 grams confectioners (powdered) sugar
1 teaspoon vanilla extract
80 grams cookies (around 6 pieces)
40 grams butter, room temperature
Optional: cranberry compote
100 grams milk chocolate
Ice cube tray or flat baking tin
Rolling pin
Put the cookies in a zip-lock bag, close tight and crush the cookies with a rolling pin. You can also use a blender or food processor for this step.
Put the cookie crumbs in a bowl and add the soft butter. Use a spoon to mix well. Put the cookie mixture on the bottom of an ice cube tray or a flat baking tin. If you’re not using silicone moulds, you might want to use parchment paper. Put the tin in the freezer for 10 minutes.
Divide the cranberry compote over the crust.
Put the cream cheese, powdered sugar and vanilla extract in a bowl and whisk untill smooth. Divide the cream cheese mixture over the cranberry compote.
Freeze for at least one hour.
Melt the chocolate au-bain-marie or in the microwave (stir every 20 seconds).
Dip the cheesecake bites in the chocolate mixture. You can use a fork or bamboo skewer for this.
Line a tray with parchment paper and put the chocolate covered cheesecake bites on it. Freeze for 10-15 minutes and store in the fridge until serving.
