Recipe: coffee date bread

I’ve got a new favorite after banana bread and it’s this coffee date bread! It’s a delicious, healthy snack with less than 100 calories per slice! It’s high in carbs, so it’s a perfect snack for before or during a work-out!

I saw this recipe for coffee date bread in Eet als een Atleet (Eat like an Athlete), the newest book from I’m a Foodie. I’m a big fan of their first book Eet als een Expert and this new sister is also great. You can read my review about Eet als een Atleet in Dutch here.
I’ve adjusted the recipe a bit and used the Choco Loco spices from Green Gypsy. You can use the Choco Loco mix which exists of cacao, coconut sugar, cinnamon, nutmeg and ginger in everything you bake. Cookies, pancakes, cake… and this coffee date bread!
I’ve added less honey than the original recipe from Eet als een Atleet, but otherwise all the credits for this yummy date bread go to the I’m a Foodie team!

koffie dadel cake recept

Ingredients:
180 gram Medjoel dates (app. 7 pieces)
150 ml coffee
2 ts baking powder
2 ts baking soda
180 gram whole wheat flour
2 ts Choco Loco spices
2 egg whites
1 sachet vanilla sugar
1 tbs honey
40 gram walnuts, chopped

Preheat the oven to 180°C/350°F. Put the dates, 1 ts baking powder and the coffee together in a bowl, let it soak in. In another bowl mix the flower, the other half of the baking powder, baking soda and Choco Loco spices.
In a fat free bowl whisk up the egg whites and add the vanilla sugar and the honey when the egg whites begin to form soft peaks. Whisk a little longer so that the vanilla sugar is completely absorbed. Combine the egg white with half of the walnuts and the coffee date mixture. Add this mixture to the flour and combine it until a (quite thick) mixture is formed. Grease a cake pan and bake the coffee date bread in 45 minutes in the middle of the oven. Remove the date bread from the cake pan when it’s cooled down and cut it in ca 15 slices.

I always freeze the individual slices, this way I can take a slice out every morning and I always have a healthy snack with me!
