Gluten-free blueberry banana bread

I discovered the gluten-free flour from Lisa’s Choice and now I love baking gluten-free things! On this page I’m sharing the recipe for this gluten-free blueberry banana bread. This blueberry banana bread isn’t only gluten free, it’s free from added sugars or sweeteners too. It’s a great healthy cake to serve at Easter, but it tastes great any other time of the year too.

I made this gluten-free blueberry banana bread with the gluten-free flour from Lisa’s Choice. All products from Lisa’s Choice are gluten free, making them perfect for those with Coeliakie or those who want to eat less gluten. You can get the products from Lisa’s Choice at several stores. I ordered them via online supermarket Crisp.
There are all kinds of Lisa’s Choice products available at Crisp. Some products that you can enjoy instantly, like apple cakes. And some products so that you can bake things yourself at home like the gluten-free flour I used for this blueberry banana bread.

Recipe gluten-free blueberry banana bread

Ingredients:
3 eggs
3 bananas
300 grams blueberries
100 grams of Lisa’s Choice flour
1 tbs baking powder
30 grams grated coconut

Optional toppings: coconut yogurt, coconut flakes, lemon zest

Preheat the oven to 180°C. Mix the eggs, banana, flour, baking powder and grated coconut in a food processor. Soon 2/3 of the blueberries through the batter. Line a cake tin with parchment paper. Pour the batter in the tin.
Bake the blueberry banana bread in the oven for 40 minutes.
Let it cool for a few minutes, remove it from the tin and let it cool completely. Top with coconut yogurt, the remaining blueberries, coconut flakes and lemon zest.
