Recipe vegan Gado Gado

I’ve made vegan Gado Gado, one of my favorite dishes of the Indonesian kitchen. Gado Gado is always vegetarian, but it’s often served with egg and sometimes milk is added to the peanut sauce. I’ve made a vegan version that is completely plant-based, but if you want you can add a boiled egg. On this page I’m sharing the recipe of vegan Gado Gado.

Gado Gado is my favorite dish in the Indonesian kitchen. I love everything with peanut butter and peanut sauce, so I’m easy to please when that’s included. Gado gado is also a healthy dish as it’s vegetarian and full of vegetables. Gado gado is often served with a boiled egg, but you can easily skip it to make this vegan Gado Gado.
Many Indonesian dishes are served with ‘krupuk’ (kroepoek), but those deep fried crackers are often made with fish or prawns. My solution to serve Indonesian dishes with vegetarian and even vegan deep fried crackers is to use cassave crisps instead of krupuk.

Recipe vegan Gado Gado

Ingredients (serves 2):
75 grams taugé
200 grams green beans
100 grams carrot
300 grams white cabbage
3 tablespoons peanut butter
0.5 teaspoon sambal
1 tablespoon ketjap manis
4 tablespoons boiling water
Cassave crisps
Optionally for non vegans: 2 hard boiled eggs

Bring water to a boil, add the green beans. After three minutes add the carrot and after two more minutes add the white cabbage. Boil for 5 more minutes, then drain.
Put the taugé in a drainer and poor boiling water over it.
Mix the peanut butter with the sambal, ketjap manis and boiling water in a bowl. If the peanut sauce is too thick you can add some more boiling water.
But the vegetables in a bowl, serve with the peanut sauce and the cassave crisps.
Serve your gado gado with rice and optionally hard boiled eggs.
