Watermelon Feta salad

A good salad in summer is always nice. Not only for a picnic or a barbecue but also as a main dish for dinner on a warm day. But I noticed that I often kept making the same salad. If you’re also stuck in your salad-routine, this watermelon feta salad might be a good change. On this page I’m sharing the recipe of this watermelon feta salad.

When the days are warm you might want to have a lighter meal in the evening. A salad is always a good idea. This watermelon feta salad is a great salad for summer. It’s very refreshing. The home-made dressing will surely surprise everyone!
I think it’s always nice to step away from your standard salad combination and to try something new. I got the inspiration for this salad from the Delicious Salad Magazine. Besides their monthly magazine, they also publish specials occasionally. Special edition number 5 in the Netherlands was filled with salads. My eye caught this watermelon salad with feta straight away. I love the red color of the watermelon in this salad! I adjusted the recipe slightly and I’m sharing it on this page.
The taste of the dressing for this salad will probably surprise people. It’s spicy and sweet at the same time! Instead of the regular yogurt or honey as a basis for a salad dressing, this one’s made with jelly and sambal
Below is the recipe for 4 people. I made half of the recipe, so you’ll see a smaller salad on the picture.

Recipe watermelon feta salad

Ingredients (for 4 servings):
1 small watermelon, cut in triangles
1 cucumber
200 grams feta, crumble
Fresh coriander (cilantro)
75 grams cashews
1 teaspoon sambal
1 tablespoon strawberry jelly
4 tablespoons olive oil
1/2 lemon

Cut the cucumber lengthwise in 3 or 4 strips. Cut the strips in slices.
Mix the watermelon pieces, cucumber, feta cheese and coriander in a bowl.
Mix the remaining ingredients in a small bowl to get the dressing.
Serve the salad with the dressing.
