What is Cookie Butter?

Cookie butter has become incredibly popular over the past few years. This smooth spread is made from speculoos cookies that are blended into a creamy paste. Lotus Biscoff Cookie Butter is especially popular among people with a sweet tooth. The flavor is a delicious combination of caramel, cinnamon and cookies. You can spread it on toast, use it in desserts, cakes or, like in this recipe, between slices of French toast. It instantly turns a simple breakfast into something extra special.

What is French Toast?

French toast is a classic dish that has been enjoyed for generations. It most likely originated as a clever way to use up stale bread. Slices of bread are dipped in a mixture of egg and milk before being fried until golden brown in butter. In different countries the dish is known by different names, such as pain perdu. Nowadays French toast is no longer just a leftovers recipe, but a popular breakfast and brunch dish that you can customize in endless ways. Like these delicious French toast sandwiches with cookie butter.

Recipe Biscoff French Toast

Serves 2
Preparation time: approximately 20 minutes

Ingredients

  • 2 eggs
  • 250 ml milk
  • 50 ml heavy cream
  • 25 grams granulated sugar
  • 30 grams light brown sugar
  • Pinch of salt
  • 4 thick slices of bread, such as brioche or soft white bread
  • Butter for frying

For the topping:

  • Biscoff Cookie Butter Creamy
  • Fresh fruit

Instructions

In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, light brown sugar and a pinch of salt until fully combined.

Heat a little butter in a frying pan over medium heat. Dip the bread slices into the egg mixture one at a time, making sure both sides are coated well. Don’t soak the bread for too long, otherwise it may become too soft.

Cook the bread slices in the pan for a few minutes on each side until they are beautifully golden brown and slightly crispy on the outside.

Spread a generous layer of Biscoff Cookie Butter onto one slice of French toast and place another slice on top to create a sandwich. You can also add a little extra cookie butter on top if you want an even more indulgent treat.

Serve the Biscoff French toast warm with fresh fruit like strawberries, raspberries or banana.

Tip: if you’re making multiple batches, keep the French toast warm in a preheated oven at 300°F (150°C) until ready to serve.
