New recipe: vegetarian burrito’s with cheese

Any other cheese lovers in the house? Especially as a vegetarian it comes in handy if you like cheese. Today I’m sharing a super easy recipe with you for burrito’s with a nice layer of molten cheese. Cheese is such a good combination with Mexican food and ever since my trip to Mexico a few months ago I’m even more into Mexican food. And I already had quite a few Mexican recipes on my blog, like pumpkin nachos and Mexican breakfast dish huevos rancheros.

If you’re also a cheese lover, you might agree that some cheeses are better than others. Recently I discovered Stompetoren Kaas. Stompetoren cheese is made from meadow milk which means that the cows are grazing in the fields. This makes the cows more happy and it makes me more happy too! And it actually makes the farmers more happy as well, as Stompetoren is giving them a reward for taking good care of their cows.
Stompetoren cheese is made in North Holland in the Netherlands and is available in cheese shops all over the country. As a matter of fact it’s sold at over 200 locations. With the ‘belegen’ (mature) cheese I made this super easy recipe for vegetarian burrito’s. All you need is 4 ingredients and 15 minutes. Perfect for a weekday dinner or when you don’t feel like cooking but you still want to eat healthy.
I used a Burrito Mix for this recipe, a package with beans, vegetables and spices so you don’t have to add anything yourself.

Recipe (2 people):

8 whole wheat tortillas
1 bag (500 grams) Burrito mix (I used ‘Burrito Schotel‘ van Hak)
50gram Stompetoren cheese (belegen)
Fresh coriander (cilantro)

Preheat the oven to 180C/350F. Shortly warm the Burrito mix in a frying pan. Divide the mix over 8 tortillas. Roll them all up and place them in a greased oven tray. Grate the cheese over the burrito’s. Bake them in the oven for 15 minutes. Sprinkle with the coriander before serving.

    • I used a Burrito mix which they sell in the Dutch supermarkets. It’s beans and vegetables in a seasoned sauce.
