On this page I’m sharing the recipe for a vegetarian Sushi Traybake. A Sushi Traybake is a dish with sushi rice prepared on a baking tray in the oven. The Sushi Traybake became very popular on TikTok and Pinterest in the summer of 2023, and I decided to create a vegetarian version of the popular Sushi Traybake. On this page I’ll share the recipe with you!
Sushi Mash-ups

You probably know sushi from the small rolls that are very popular. When we went to Japan we ate sushi almost every day! Back then I still ate fish and in those days I created a Sushi Pie that became one of my most popular recipes in the early days.
After that Sushi Pie, I created several other sushi recipes. Often not rolling sushi in the original way, but rather creating a ‘Sushi Mash-up’. A food mash-up, is just like a music mash-up where you combine two well-matching songs to create a new one. For a food mash-up you combine two well-matching dishes to create a new one. And sushi rice and the common sushi ingredients, make a great starting point for a food mash-up. They’re easy to combine with other ingredients, and most of all easy to use in other forms than the roll ups. I’ve made a sushi pizza for example and even savory sushi donuts.
What is a Traybake?
A traybake, also known as a sheet pan meal or sheet pan dinner, is a cooking method where various ingredients, often including a protein source, vegetables, and sometimes grains or starches, are placed on a single baking tray or sheet pan and then baked together in the oven. This method is popular for its simplicity, as it typically involves minimal preparation and cleanup.
Here’s how a traybake typically works:
- Ingredients Preparation: You’ll prepare your ingredients by cutting, chopping, or seasoning them as needed. For example, you might slice chicken breasts, chop up vegetables, and season everything with herbs, spices, oil, and other flavorings.
- Arrangement on a Tray: All the prepared ingredients are arranged on a single baking tray or sheet pan in a single layer. It’s important to distribute them evenly to ensure even cooking.
- Baking: The tray is placed in the oven and baked at a specified temperature for a set amount of time. During baking, the flavors from the different ingredients meld together, and the heat causes them to cook and brown.
- Serving: Once the traybake is done, it is typically served directly from the baking tray or transferred to a serving platter. It’s a convenient one-pan meal that’s ready to be enjoyed.
Traybakes are versatile and can be adapted to various cuisines and dietary preferences. You can make a variety of dishes, such as roasted chicken with vegetables, baked salmon with asparagus, or even vegetarian options like roasted tofu with mixed vegetables. The possibilities are endless, making traybakes a popular choice for busy cooks looking for a simple and tasty meal solution.
Most traybakes are made with potatoes, but you can also make a tray bake with (sushi) rice!
Making Vegetarian Sushi Traybake Step by Step

Step 1: Cook the Sushi rice
Prepare the sushi rice as stated on the package. Mix rice vinegar with salt and carefully mix it with the rice once it’s cooled down.
Add the rice to a casserole dish or baking pan. Press down with the back of a spoon.

Step 2: First layer of toppings
Sprinkle the crumbled nori sheets and sesame mixture on top. Bake the vegetarian sushi traybake for about 15 minutes.

Step 3: Final layer of toppings
Top your Sushi Traybake with other vegetarian ingredients like avocado and ginger.

Recipe Vegetarian Sushi Traybake
Ingredients:
- 300 grams sushi rice
- 5 tablespoons of (rice) vinegar
- 1 teaspoon salt
- 1 package of Nori sheets (5 pieces)
- 250 grams farmer dip (I used Bieze Rauwkost Farmer)
- Japanese Mayo
- 1 Avocado, sliced
- Poke Ginger Sticks or Sushi Ginger
Prepare the sushi rice as stated on the package. Mix the rice vinegar with the salt and carefully mix it with the rice once it’s cooled down.
Preheat the oven to 220C. Crumble 1 of the nori sheets and mix it with the sesame seeds.
Add the rice to a casserole dish or baking pan. Press down with the back of a spoon.
Sprinkle the crumbled nori sheets and sesame mixture on top.
Bake the vegetarian sushi traybake for about 15 minutes. Cut the remaining Nori sheets in 4 squares each.
Top with Japanese Mayo, avocado slices and ginger.
Cut the sushi traybake in squares and serve each square on top of a Nori sheet.
