Double Chocolate Smarties Easter Cookies

These Double Chocolate Smarties Easter Cookies are so much fun to make for Easter! They’ve got two layers, a chocolate cookie layer and a Smarties White Chocolate layer. The combination of these double chocolate layers is super tasty.

Chocolate Cookie layer

To make these Double Chocolate Smarties Easter Cookies you start by making the Chocolate Cookie Layer. You can use your own recipe for Chocolate cookies, but you can also use a store-bought cookie dough. Most supermarkets sell cookie dough nowadays. I got my chocolate cookie dough at the supermarket in the Netherlands, in the cooling shelf. It’s the Chocolate Chunk Cookie dough from Danerolles.
Make small balls from the cookie dough and press each dough ball in a bunny shaped silicone mold.
I used this Easter bunny mold to make these Easter cookies. Bake the cookies for about 12-15 minutes and let them cool off completely before taking them out of the mold.

White Chocolate Smarties layer

After making the bunny shaped chocolate cookies, it’s time to make the second layer; the white chocolate Smarties layer. You can of course also use M&M’s for this layer, but I went for Smarties as they’re nice and small. I used white chocolate but you can of course use any chocolate that you want.

Recipe Double Chocolate Smarties Easter Cookies

Ingredients for 12 Easter cookies:
200 grams cookie dough
150 grams white chocolate
4 small boxes of Smarties

Preheat the oven to 180C. Knead the cookie dough until soft and fill the 12 bunny shaped molds. Press down firmly. Bake the chocolate cookies in 12-15 minutes. Let them cool off completely before taking them out of the mold.

Clean the silicon mold.

Melt the white chocolate au-bain-marie.
Divide the Smarties over the bunny shaped molds.
Use a teaspoon to poor the melted white chocolate over the Smarties. Move the mold a bit so that the chocolate spreads out evenly over the Smarties.

Press a chocolate cookie bunny in each mold, on top of the white chocolate Smarties layer.

Let the cookies set in the fridge for about an hour.

Serve at room temperature and store them in an air-tight container.
