Loaded sweet potato fries (vegetarian)

I love it when comfort food isn’t unhealthy! These loaded sweet potato fries for example are quite okay! I’ve made many recipes with sweet potatoes before. There are just so many ways in which you can use them! I’ve made recipes like sweet potato falafel and sweet potato toast. This time I made sweet potato fries. And not just a plain portion of sweet potato fries but loaded sweet potato fries. This dish contains sweet potato fries covered with all kinds of tasty and healthy ingredients, topped with truffle mayonnaise and sriracha sauce!

Loaded sweet potato fries
Ingredients (2 people):
2 large sweet potatoes
1/2 tsp chili powder
2 grilled red peppers
1 red onion
200 grams spinach
2 tsp (vegan) mayonnaise
1 tsp sriracha or chil sause
Fresh coriander

Cut the sweet potato in fries. Toss them with the chili powder. Put the fries on parchment paper and put them in the oven for 40 minutes (200C/400F).
Chop the red onion and grilled peppers. Shortly fry the spinach. Put the sweet potato fries in a bowl, top with the spinach, onion and grilled peppers. Divide the mayonnaise and sriracha sauce over the loaded sweet potato fries. Add fresh coriander before serving.
