The Mexican kitchen has been a favorite of mine for years. And ever since our trip to Mexico, I like it even more. The traditional Mexican dishes lend themselves perfectly for some fusion cooking. Tacos, nachos, wraps and guacamole can be used for all kinds of dishes. I’ve made a Tortilla Oven Dish with Pumpkin for example and Sweet Potato Nachos. This time I’ve made quesadilla’s. This time I made vegetarian quesadilla’s with hummus, avocado and feta cheese. I got the recipe from a small cook book that Dutch hummus brand Maza brought out. The recipes in the book all included hummus and were created by Fajah Lourens. Fajah Lourens is one of the most well-known ‘fit girls’ from the Netherlands and mostly known from her book ‘My Killer body motivation’. I loved this vegetarian quesadilla recipe the most from the cookbook. Mostly because it’s easy to make and also because it includes two of my favorite ingredients: hummus and avocado. And I’ve got to admit, I also loved the way it looked with the contrast of the green avocado and spring onions and the white feta cheese. Below is the recipe for these vegetarian quesadilla’s with hummus, avocado and feta.
I’ve used a plain hummus for these quesadilla’s but you can also use the Maza Hoemoes Chipotle if you like it a bit more spicy. I didn’t add the jalapeño pepper from the recipe as I thought that that would make it too spicy for lunch. But if you’re having these vegetarian quesadilla’s for dinner you might like to spice it up a bit. The recipe below is a lunch portion for 2 people.
Recipe vegetarian quesadilla’s with hummus, avocado and feta
Ingredients for 2 people:
4 whole wheat tortilla wraps
1 package hummus
1 avocado
1 spring onion
75-100 grams feta cheese
Optionally: 1 jalapeño pepper
Top one half of the wraps with the hummus. Peel the avocado, cut it in cubes and mash it with a fork. Slice the spring onion. Mix de mashed avocado with the spring onion and the crumbled feta cheese. Divide the hummus, avocado, feta mixture over the wraps. Fold the wraps in half. Shortly fry the vegetarian quesadilla’s on both sides in a skillet on medium fire. You don’t need to use oil for the quesadilla’s.
Cut each quesadilla in three pieces.
