Jackfruit is a great replacement for vegetarians, vegans and flexitarians. Jackfruit easily gets the structure of pulled meat, so you can use jackfruit instead of pulled chicken or pulled pork in your dishes. On this page I’m sharing the recipes of vegan pulled jackfruit tacos.
In almost all supermarkets you can buy canned jackfruit. As it has a long shelf life, you can always have a can at home and just use it when you feel like it. Making jackfruit also great for some ‘cupboard cooking’ when you make a dish with everything that you’ve got handy.
The same goes for the tortillas, they also have a long shelf life. I used blue corn tortillas for this dish, as I love the contrasting color. But you can also use regular yellow corn tortillas of course.
I just used the barbecue sauce that I already had in my fridge, as it was a vegan sauce. Most barbecue sauces are (surprisingly) vegan, but double check the label if you want to make sure.
Recipe vegan pulled jackfruit tacos
Ingredients (for 2):
6 corn tortillas
1 can jackfruit (280 grams), drained
1 small can corn (150 grams)
1 avocado
150 grams red cabbage
2 tablespoons barbecue sauce
1 onion, finely chopped
1 clove garlic, finely chopped
1/2 teaspoon paprika
1/2 teaspoon ground coriander
Lime
1 tablespoon olive oil
Put the jackfruit in a bowl and use a fork or your hands to pull the pieces apart. Warm some olive oil in a pan and shortly fry the onion and garlic. Add the jackfruit and stir for 1 minute. Add the barbecue sauce, paprika powder and ground coriander. Stir well and fry for 2 minutes on medium fire. Add the corn and red cabbage, turn the fire to low and fry for 1 more minute. Cut the lime in half and squeeze the juice of 1 half over the jackfruit mixture.
Prepare the corn tortillas as stated on the package. I prepared them by warming them in a skillet without oil for 15 seconds per side.
Peel the avocado and cut in small pieces.
Fill the tacos with the jackfruit mixture. Top with the avocado pieces. Serve with the remaining lime.
