November is Avocado month and Amsterdam has been crowned Avocado Capital of Europe. The perfect excuse to share my favorite avocado recipes with you for some avocado inspiration!
As you might know, I love avocado! I eat it almost daily (my favorite on-the-go lunch is an avocado-hummus sandwich) and I even have a phone cover with avocados (check it here). So this avocado-month sounds like a great month to me!

Avocado Pancakes
These avocado pancakes are one of the most popular recipes on my blog. I’m not surprised as we all love pancakes and we all love avocado! These pancakes are gluten free and sugar free so it’s healthy comfort food and perfect for Sundays! Check the recipe here.
Avocado Fries
Speaking of comfort food! How about these avocado fries? They’re fun to make and very delicious. Warm avocado might be a new experience for you, but don’t be afraid to try it out as it’s surprisingly good!

Stuffed Avocados
Speaking of warm avocados, you eat these stuffed avocados straight from the oven! It’s a really impressive brunch dish and not difficult to make! You can go for a vegetarian version or add some salmon for fish lovers.

Grilled Avocado
Did you know you can also grill avocado? I did it a lot last summer on the barbecue but you can also use a grill pan if you have one. Just cut the avocado in half and remove the pit. Place both halves with the cut side down on the barbecue or grill for a few minutes. I stuffed mine with a tomato and red onion chili. Click here for more vegetarian and vegan barbecue ideas.
Avocado and Sushi
Avocado and Sushi are a great combination! It combines very well with salmon but it’s also a great sushi ingredient for vegetarians. I used avocado in my Sushi Pie, Sushi Jar, Sushi Pizza and Sushi burgers. The video of my Sushi Pie is even the most watched video on my YouTube account!
Avocado Bun
You already saw him on the top of this page, but this avocado bun is still one of my favorite food pictures. It got more than 1000 likes on my Instagram account and it’s featured on my business cards. The fun thing is that many people ask how I made the bun green. But the bun isn’t made of bread, it’s an avocado! You can read more about it here.
Avocado Toast
Avocado toast isn’t really a recipe but it is one of my favorite dishes. Crispy toast with mashed avocado or hummus with avocado slices: I could eat it every day! I took this picture when I brought my avocado toast to the next level. Two layers of toast with mashed avocado and cubed tomato on top! Toast with mashed is also a great combination with facon (fake bacon) or poached eggs, or go for cream cheese with avocado slices.
Avocado Carpaccio
I made this vegan avocado carpaccio for Christmas but it’s a great starter any time of the year. All you have to do is thinly slice an avocado and top it with whatever you want. I used potato stars and pommegranate seeds for this one.
